The secret of rich sweetness
Aromatic vegetables (onions, carrots, celery) are slowly sautéed to bring out their aroma.
We use three times the amount of onions than usual, which not only increases the quantity, but also the sweetness. The onions are sautéed until they are as sweet and tender as jam.
Tomatoes (San Marzano) are added and simmered, slowly and thoroughly until all the water is absorbed. Once the water has been cooked down, water is added and cooked down again until all the water has been absorbed. This process produces a tomato sauce with concentrated "umami" and "sweetness. When you try it, you will notice that the "acidity" has almost disappeared and the "umami" and "sweetness" stand out.
Beef and pork are used in this sauce, with the beef producing the umami of the meat and the pork producing the sweetness of the meat.
The beef is ground four times more coarsely than normal ground meat, giving it a meaty, chewy texture. Beef and pork are ground separately and stir-fried separately, so that you can enjoy the best of both meats when you put them in your mouth.
